Spanakopita (Cheese & Spinach Pie) - submitted at Darwin Fringe Festival, August 2009

Ingredients

  • 1 Bunch spinach
  • 1 Cup chopped spring onions
  • 2 Cloves garlic (crushed)
  • Olive oil
  • 1/2 Cup chopped parsley
  • 1/2 Cup chopped celery
  • 1 Cup crumbled fetta
  • 1 Cup crumbled tasty cheese
  • Packet of puff pastry sheets

Recipe

  1. Fry onions & garlic in oil till brown. Set aside
  2. Chop up spinach and steam
  3. Drain water from spinach & drink (very good for you!!)
  4. Put spinach in a bowl and mix with all other ingredients
  5. Line a baking dish (greased) with patry sheets
  6. Fill with spinach mixtured
  7. Using remaining sheets, form a pastry lid on top
  8. Punch a few holes with a fork in the pastry
  9. Put in oven for 20-30mins on 180degrees celcius until lightly browned
