Brown Lentil & Vegetable Soup
Ingredients
- 1 tbsp olive oil
- 2 carrots, peeled, diced
- 2 zucchine, diced
- 2 sticks celery, diced
- 1 brown onion
- 400g can diced tomatoes
- 2 cups vegetable stock
- 400g can brown lentils, rinsed, drained
- 1/2 cup flat-leaf parsley leaves, chopped
- 1 lemon, quartered
Recipe
- Heat oil in a large saucepan over medium/high heat. Add carrots, zucchini, cleery and onion. Cook, stirring occasionally for 10 mins or until veg begin to soften.
- Add tomatoes and stock to pan. Cover and bring to the boil. Reduce heat to medium/low. Simmer, covered for 15 mins or until veg are soft.
- Add lentils to soup. Cook for further 5 mins or until heated through.
To Serve, pour into bowls. Sprinkle with parsley and a squeeze of lemon juice. Season with freshly ground black pepper. Good to eat with multi-grain rolls.
