Lisa's Pasta

Ingredients

  • 2kg Roma tomatos
  • 1kg Mushrooms (peeled & sliced)
  • 1 Onion (peeled & chopped finely) 
  • 2 Red capsicum (de-seeded & chopped)
  • 3 Cloves garlic (peeled & chopped finely) 
  • 280g Tomato paste
  • 2 Tins tomatos
  • 100g Pitted sliced olives
  • 1 Bunch fresh basil
  • Oil
  • Salt
  • Spaghetti
  • Fresh parmesan cheese (grated)
  • Bunch fresh oregano

Recipe

Sauce

  1. Heat oil in pan & fry onion & garlic until soft (if they start to brown, add a little water)
  2. Add fresh tomatos, simmer until soft stirring constantly
  3. Add tin tomatos, mushrooms, tomato paste and salt to taste
  4. Crush 1 doz fresh basil leaves between your finger, tear in to small pieces and add to the tomato mixture
  5. Add chiopped capsicum & sliced olives 
  6. Let mixture simmer on low heat, occasionally stirring

Spaghetti

  1. Heat 3-4 litres of salted water in large saucepan
  2. When boiling add lots of spaghetti and cook for  15 -20 mins

To serve - Pour tomato mixture over spaghetti and top with grated parmesan and fresh oregano
