Laksa

Ingredients

  • oil
  • 1kg chicken (diced)
  • 2 tins coconut milk
  • 5 small onions (sliced thinly)
  • 3 stalks lemon grass
  • 3 tsp crushed garlic
  • 3 tsp crushed ginger
  • 3 tsp paprika
  • 3 tsp turmeric
  • chilli powder or flakes(optional)
  • 6 cups water
  • Thin noodles
  • Fresh coriander
  • Limes

Recipe

  1. Heat oil in large pan
  2. Fry onions till soft
  3. Add garlic, ginger and all spices
  4. Add  chicken to pot and boil till cooked (stirring frequently)
  5. Twist lemon grass to split and add to pan
  6. Pour in coconut milk and stir
  7. Add water and salt to taste
  8. Leave to simmer whilst cooking noodles in separate pan (follow directions on packet)

To serve

  1. Remove lemon grass stalks and discard
  2. Divide noodles into separate bowls
  3. Pour laksa mixture over noodles
  4. Top with fresh coriander and freshly squeezed lime juice
