Catherine's Savoury Vegetables in Yoghurt

Ingredients

  • 1/2 cup ghee/oil
  • 3 medium onions, finely chopped
  • 1 large piece of ginger peeled & minced
  • 3 garlic cloves, peeled/minced  (optional)
  • 2 teaspoons turmeric
  • 2 teaspoons garam masala
  • 1 teaspoon salt
  • 3 cups finely chopped potatoes
  • 2 cups finely chopped carrots
  • 2 cups peas
  • 11/2 cups yoghurt, plain

Recipe

  1. Heat ghee (clarified butter) or oil in wide pot
  2. Add onions, garlic, ginger and saute until they brown lightly.
  3. Add turmeric, stir
  4. Add vegetables and stir for a few mins in oily mix
  5. Add water to cover, bring to a boil, lower heat and cook 15/20 minsutes
  6. Add peas and simmer to heat through
  7. Mix through yoghurt
  8. Sprinkle garam masala
  9. Mix through and serve

For meaty version, add 1/2kg of good quality mince to be stirred into onion, garlic ginger mix after it's browned. Brown meat, and then follow the directions above.
